This warm and tasty casserole is rather similar to a pork version of goulash. Make a batch and freeze some for future fast days. Alternatively, this is a great recipe for all the family, just add mash and some winter veg.
The sweet apricots make for a delicious taste combination with the salty pork. Serve with a green vegetable such as mangetout (snow peas) or purple sprouting broccoli. If using wooden skewers, make sure they are soaked in a bowl of water for at least 30 minutes before using to prevent them burning during cooking.
