Much as I’d like to eat granola and yogurt every day for my breakfast, some days I need a change and want something even more filling. These 2 Ingredient Banana Pancakes more than fits the bill.
Banana pancakes are ready in just a few minutes and are just a little bit sweet.
As these pancakes are packed with protein, I think they’d make a fabulous start to the day if you are off to do any kind of exercise, but particularly a non-cardio gym class or similar. Your body needs protein to build muscle and a protein-based breakfast will make you stronger and more capable.
2 Ingredient Banana Pancakes
Serves 1 • Ready in 10 minutes
1 banana (106 cals)
2 eggs (182 cals)
1 tsp mild olive oil (27 cals)
• Use the back of a fork to thoroughly mash the banana.
• In a separate bowl, whisk the eggs. Add the banana to the whisked eggs.
• Heat the oil in a medium frying pan until hot but not smoking. Pour in the pancake mix. Cook for 3-4 minutes, turning if you dare until just cooked but still a little wobbly.
